Easy One Pot Fish Dish

This one pot fish dish is an easy dish for a busy day. I try to find ways of making fast, healthy meals for my kids and this dish is just that. Easy to make and healthy too. You just need to throw in everything, let it cook. Serve hot with rice.

Preparation Time: 10 minutes
Cooking Time: 10 minutes
Makes: 5 servings





Ingredients
5 fish fillets (white fish)
12 olives (half of which should be chopped)
1/2 onion (chopped)
1 tomato (chopped)
10 capers
Paprika, salt & peper to taste
Olive oil
3 tablespoons cream


Method

  • Heat 3 tablespoons of oil in a pan. Add the onions. Cook until tender.



  • *Add the tomatoes, olives and capers to the oil. Let it simmer for a few minutes.



    *Meanwhile rub the fish with a mixture of paprika powder, salt and paper.



  • Place the fish in the pan over the onions and olive mixture, cover and cook for a few minutes, turn the fish over and cook for another few minutes.



  • Pour the cream over. Cook till the fish is done.



  • *Serve with rice.
