Easy Potato Kugel
This is a simple dish, yet it is delicious and an excellent accompaniment for almost any meal.
Preparation Time: 30 minutes
Cooking Time: 1 ¼ hours
Serves: 8 - 10
Ingredients
¾ cup vegetable oil
4 heaped cups potatoes (about 10)
2 eggs, beaten
2 onions
2/3 cup fine matzo meal (or flour)
Salt & pepper
Method
Preheat the oven to 190°/170° fan forced.
Process or grate the potatoes and onions together.
Put them in a tea towel and squeeze out as much moisture as you can - you will probably need two tea towels to do this.
Put the oil in an ovenproof baking dish, and leave there till it is very hot - about 10 minutes.
Put the potato mixture into a large bowl, and add the eggs, matzo meal, and mix well.
Add salt and pepper - this recipe NEEDS salt so do not skimp on this!
Remove the HOT baking dish, taking care not to burn yourself.
Spoon the mixture into the hot oil and spread it to cover the base. (The hot oil ensures the base will also get browned)
Bake for about 1 hour 20 minutes or until it is golden brown.
Allow to cool, drain on paper towel, and cut into squares.
Reheat in the oven until it is piping hot, brown and sizzling.
Serve - delicious as an accompaniment, snack or spread with jam as a sweet! I had them with my chicken sausage rolls.
