Easy Prawn Salad
I had a craving for prawns and wanted something easy for a meal on a hot summer night, and this is what I came up with! No cooking required - just mixing. I always have some cooked rice in the freezer for just such an occasion!
Preparation Time: 10 minutes
Cooking Time: 0 minutes
Serves: 2
Ingredients
½ cup cooked rice
150 - 175 g prawns, cooked and shelled
About 3 tbsp pineapple pieces, drained
½ green capsicum
2 stalks celery
Method
Chop the capsicum and celery and mix.
Mix the capsicum and celery with the rice and pineapple.
Check if it needs salt and pepper, and add to taste.
Garnish with shelled prawns.
