Easy Prawn Salad

I had a craving for prawns and wanted something easy for a meal on a hot summer night, and this is what I came up with! No cooking required - just mixing. I always have some cooked rice in the freezer for just such an occasion!

Preparation Time: 10 minutes
Cooking Time: 0 minutes
Serves: 2

Ingredients
½ cup cooked rice
150 - 175 g prawns, cooked and shelled
About 3 tbsp pineapple pieces, drained
½ green capsicum
2 stalks celery

Method
  • Chop the capsicum and celery and mix.


  • Mix the capsicum and celery with the rice and pineapple.


  • Check if it needs salt and pepper, and add to taste.

  • Garnish with shelled prawns.
