Easy Quiche

There are many different variations of the quiche recipe. This is a simple yet tasty variation, made on basic ingredients.

Preparation Time: 20 minutes
Cooking Time: 30 minutes
Makes: 5 servings

Ingredients
2 sheets of ready rolled puff pastry
3 tomatoes
2 onions
250g diced bacon
1/2 cup of grated cheese
6 eggs
180mL milk
Ground black pepper (to taste)

Method
  • Lightly grease a shallow oven proof dish.

  • Line the dish with the pastry, allowing approximately 3cm of overhang.

  • Place a sheet of baking paper on top of the pastry, and fill with rice or pie weights. Then blind bake at 160degrees celsius until lightly golden.


  • Finely dice the onion and tomatoes.

  • Add the bacon, onion and tomato to a frying pan on high heat.


  • Combine the eggs and milk in a separate container.


  • After approximately 10 minutes, or when the bacon mixture is cooked, remove from heat.

  • Combine the bacon mixture with the egg mixture.

  • Add the cheese and pepper, stir until combined.

  • Remove the pastry from the oven, discarding the baking paper and rice.

  • Pour the egg mixture into the pastry shell and place in oven at 180 degrees celsius for 30 minutes or until egg mix has set.


  • Serve. This dish will keep for up to a week in a refrigerated, airtight container.
