Easy Seafood Laksa

This recipe makes a quick and easy seafood laksa.



Preparation Time: 10 minutes
Cooking Time: 10 minutes
Makes: 4 servings

Ingredients
150g rice vermicelli
150g hokkien noodle
1/4 cup laksa paste
3 cups vegetable stock
400ml coconut milk
750g prawns, de-veined, shelled
12 fish balls
100g tofu puffs, quartered
100g bean sprouts
salt, to taste

Method
  • Cook the vermicelli in a pot of boiling water for 2 minutes. Drain and set aside. Cook the hokkien noodle in a pot of boiling water for 2 minutes. Drain and set aside.
  • In a stockpot, add in the laksa paste and pour in the vegetable stock. Bring to the boil and turn to heat down to simmer. Pour in the coconut milk.
  • Add in the prawns, fish balls, tofu puffs and bean sprouts. Cook for 2 minutes.
  • Divide the vermicelli and noodles between 4 bowls. Ladle the prawns, fish balls, tofu puffs and bean sprout, and pour over the laksa soup.
