Easy Seed Focaccia No Knead
This tasty, no knead focaccia with a seeded crust and a fluffy centre, is great. Choose your own seeds to make the perfect flavour combination.
Pick up a salad, pick up a BBQ chicken and enjoy a slice or two of this delicious bread on a picnic.

Preparation Time: 5 minutes (plus 2 hours to rise)
Cooking Time: 25 - 30 minutes
Serves: 2 breads (18 cm x 28 cm large)
Ingredients
1 1/2 cups water, lukewarm
7 g instant yeast
1/2 tbsp salt
1/2 tsp sugar
3 cups flour (gluten free if required)
1/4 cup mixed seeds (I used pepita, sesame and poppy seeds)
Method
Add the water, yeast, sugar in a large 5L bowl, cover and set aside for 10 minutes until bubbling.
Add the flour and stir until just combined.

Cover and stand in a warm, draught-free location for 2 hours to rise. Do not punch down.

Divide the dough in two, stretch each half on a piece of baking paper and place on two baking trays.
Make diagonal crisscross cuts into the dough. Sprinkle seeds.

Preheat the oven to 220 degrees. Let the dough rest while the oven is heating.
Bake for 25-30 minutes until golden brown.
Cool on a wire rack.
Slice, serve and enjoy!
Tips
Lightly dusted hands will stop the dough from sticking to your fingers.
