Easy Spinach and Feta Gozleme

I love gozleme, and go with a friend to try many meals of gozleme.

I decided to try my own and it was SO easy and tasted delicious.

Preparation Time: 30 minutes
Cooking Time: 10 minutes
Serves: 1

For the flatbread
125 g plain flour
A bit less than 100 ml water at room temperature
½ tsp salt

For the spinach
½ bunch English spinach, washed
¼ small shallot (or onion)
1 tbsp olive oil
Salt and pepper to taste

For the filling
Spinach, cooked
Bit of feta cheese, crumbled (about 45 g)
Bit of mozzarella, chopped (about 35 g)

For the dough
Put the flour and salt in a bowl, and slowly add the water while kneading

Knead the dough for about 5 to 10 minutes, or until it becomes smooth.


Form it into a ball, cover it with a damp paper towel, and let it rest for about 15 minutes.

For the spinach
Cook the onion in a frying pan with the olive oil.

When the onion is soft, add the spinach, salt and pepper to taste, and cook for about a minute.

Turn off the heat and leave it in the pan till it starts to wilt slightly. Allow to cool a bit.


For the assembling
Roll the dough into a VERY THIN oblong - I did this on baking paper with a bit of flour, but you can do it direct on the clean bench.


Spread the cooked spinach in the middle/side and top it with the feta and mozzarella. I added a bit of olive oil to this.


Fold it in half to cover the filling, and press the edges together.

Heat either a non stick pan or a sandwich maker which I used, and brush the outside of the gozleme with a tiny bit of oil.


Cook until there are some brown spots on it (about 5 to 7 minutes), turn if using a frypan.

Slice and serve warm.
