Edamame Miso Noodle Soup

For a quick, Asian inspired meal, throw together this noodle soup that you're sure to enjoy.

You can use other noodles if you would prefer (udon, rice, bean etc.), and likewise, you could replace the edamame with a finely sliced meat or tofu if preferred.



Miso is great for your digestive system as it is a fermented food, so if you can find a way to include more of it in your diet, your body and gut will thank you for it!

Cooking Time: 15 minutes
Makes: 1 servings

Ingredients
1 tbsp miso paste
1.5 cups hot water
1 sheet nori, shredded roughly
50g soba noodles
3/4 cup edamame beans, cooked
1 red chilli, finely chopped

Method
  • Heat the miso paste and hot water on high in a saucepan. Mix well and bring to the boil.

  • Reduce to a simmer and add the nori and soba noodles. Cook gently for a further 5 minutes.

  • Once the noodles have softened, stir through the edamame and chilli and continue to cook for another 5 minutes or until well heated through.
