Egg and Avocado Salad

A light, fresh salad based on two delicious ingredients: avocado and boiled egg, making it satisfyingly filling.



Preparation Time: 10 minutes
Cooking Time: 15 minutes
Serves: 2

Ingredients
4 iceberg lettuce leaves
1 small carrot
4 eggs
1 celery stalk
1 avocado
1 small red onion
Juice of 1 small lemon
Olive oil
Salt and pepper

Method
  • Place the eggs in a small pot and fill with water. Bring to the boil, remove the lid, and simmer for 10 minutes. Remove from the heat and drain the water. Leave the eggs to cool.
  • Finely slice the lettuce leaves, the celery, the onion and the avocado. Grate the carrot on the smallest setting on your grater.



  • If preparing in different bowls, layer the ingredients in each bowl; if preparing in a salad bowl, add all the ingredients to the bowl.
  • Peel the eggs and chop into 1/8ths. Add to the bowl/s.



  • Pour over the lemon juice and a splash of olive oil. Season with salt and pepper.
  • If using a salad bowl, mix well then serve in separate bowls. You can leave layered if you prepped the salads in separate bowls.
