Egg and Vegetable Fried Rice
A quick healthy meal for whole family. With lots of vegetables of your choice and egg.
Preparation Time: 15 minutes
Cooking Time: 30 minutes
Serves: 4
Ingredients
2 cups rice
7-8 cups water
Salt to taste
2 capsicums, cut into cubes
3 carrots, julien cut
1/2 cup shredded cabbage
4 eggs
2 tablespoon oil
2 tablespoon soya sauce
1 teaspoon garlic powder
Salt to taste
Method
Boil water with salt.
Add rice and cook till rice are fully cooked.
Drain the boiled rice.
Keep them aside.
Now heat oil in a pan.
Add eggs and scramble them.
Take the eggs out in a plate when they look fully cooked.
In the same oil add capsicum, carrots and cabbage ( you can use any other vegetable of your choice, I had only these three).
Fry for 3 minutes then add garlic powder, soya sauce, salt and scrambled eggs.
Cook for 5 minutes on high flame.
Add pre-boiled rice.
Mix everything properly.
Turn the flame off.
Serve hot.
