Egg Foo Yung
This is a good way to use up leftover rice, which I often seem to have.
It is a quick recipe and tastes surprisingly good.
I had it as a main meal however it could be served as a side dish with meat or chicken for lunch as well.
Preparation Time: 20 minutes
Cooking Time: 10 minutes
Makes: 3 servings
Ingredients
2 eggs, beaten
Five-spice powder
Oil
2 - 3 spring onions
1 garlic clove, crushed
½ small red or green pepper
80 g [link http://reviewclue.com.au/fresh-bean-shoots-by-farmland-greens/ bean sprouts]
150 g cooked rice -you can vary this amount
1½ tbsp soy sauce
2 tsp [link http://reviewclue.com.au/changs-sesame-oil/ sesame oil]
Method
Add salt and pepper to the beaten eggs, and a bit of five spice powder. Cook this in a bit of oil and keep lifting the egg, and letting the uncooked egg go underneath. Cook till it is almost done and turn off the heat.
Cut into thin strips.
Heat a bit more oil in the pan and cook the onion, red pepper, garlic and beansprouts for about 2 minutes, stirring.
Add the cooked rice, and heat through, stirring well so it does not stick to the pan.
Add the soy sauce and sesame oil and more salt and pepper if desired.
Add the omelette strips and serve either with the strips mixed in the rice, or as I did, with the strips on top of the rice.
