This is a good way to use up leftover rice, which I often seem to have.

It is a quick recipe and tastes surprisingly good.

I had it as a main meal however it could be served as a side dish with meat or chicken for lunch as well.

Preparation Time: 20 minutes
Cooking Time: 10 minutes
Makes: 3 servings

Ingredients
2 eggs, beaten
Five-spice powder
Oil
2 - 3 spring onions
1 garlic clove, crushed
½ small red or green pepper
80 g [link http://reviewclue.com.au/fresh-bean-shoots-by-farmland-greens/ bean sprouts]
150 g cooked rice -you can vary this amount
1½ tbsp soy sauce
2 tsp [link http://reviewclue.com.au/changs-sesame-oil/ sesame oil]

Method
  • Add salt and pepper to the beaten eggs, and a bit of five spice powder. Cook this in a bit of oil and keep lifting the egg, and letting the uncooked egg go underneath. Cook till it is almost done and turn off the heat.


  • Cut into thin strips.


  • Heat a bit more oil in the pan and cook the onion, red pepper, garlic and beansprouts for about 2 minutes, stirring.


  • Add the cooked rice, and heat through, stirring well so it does not stick to the pan.

  • Add the soy sauce and sesame oil and more salt and pepper if desired.


  • Add the omelette strips and serve either with the strips mixed in the rice, or as I did, with the strips on top of the rice.
