Egg friend vermicelli


Vermicelli/semiya is a form of thin pasta that is made of flour and water. It is prevalent in parts of Asia and Italy and is greatly enjoyed as a main course.This recipe involves the basic sauteing techniques .

Preparation Time: 5 minutes
Cooking Time: 20 minutes
Makes: 2 servings

Ingredients
1 red/brown onion finely chopped
1/2 tomato finely chopped
1 green chilli finely chopped
1 cup vermicelli/Semiya
1 tsp ginger garlic paste
(or 1/2 spoon ginger paste and 1/2 spoon garlic paste)
1/2 cup curry leaves
1 tsp cumin seeds
1 tsp turmeric powder
1 egg
1 tsp dry chives (optional)
1 1/2 cup water
Salt to taste
Pepper to taste

Method
  • Dry roast the vermicelli in a pan and keep aside.

  • Roasted vermicelli


  • In a medium sized deep pan, add some oil.
  • When the oil is hot, add cumin seeds and turmeric powder. Wait until the cumin seeds splutter.

  • Sauteing cumin seeds, turmeric


  • Now add onion,green chilli,curry leaves and saute well.
  • When the onion turn golden brown, add the ginger garlic paste and saute well.

  • Onions sauteed with ginger garlic paste


  • Then add the finely chopped tomatoes and saute until the tomatoes become soft.

  • Add water and salt and wait until the water boils.

  • Vermicelli added to boiling water


  • Add the vermicelli in boiling water and cook by absorption method. A way by allowing the vermicelli to cook by allowing the water to be absorbed.

  • Remove from the heat and check if the vermicelli is cooked by pressing one with your finger. If it appears soft, the vermicelli is cooked well.
  • Beat the egg well with some salt ,pepper and dry chives.

  • In a separate pan, scramble the eggs and remove when they are cooked well.

  • Add this scrambled egg to the vermicelli and mix well.
  • Garnish with coriander leaves.

    Options : For a vegetarian option, chop some carrots and beans and use it instead of egg.
