Eggless Banana & Cinnamon French Toast

Making French Toast without eggs may sound ludicrous but once you make this banana and cinnamon French Toast you will never look back. It is sweet, fragrant and has the perfect crunch. I have opted for fruit toast as my base but any bread will do.

Covered in maple syrup.

Preparation Time: 5 minutes
Cooking Time: 5 minutes
Makes: 1 serving

1 banana
2 slices of bread
1 tsp cinnamon
1/4 almond milk
1 tsp oil

To Serve
1 tbsp maple syrup
Dash of cinnamon

Blend the banana, cinnamon and milk until smooth. You want quite a runny mix so it can be absorbed by the bread.

Pour the banana milk over your bread and allow it to soak for a few minutes.

Flip your bread and allow all the liquid to be soaked up.

Put a non stick pan over a medium high heat and add the oil. Coat the pan and place your French toast into the pan. Allow to cook for about 3 minutes, flip and cook the other side.

Serve with maple syrup and a dash more cinnamon as I have here or enjoy with walnut butter, blueberry chia jam or quince jam.
