Eggless Edamame Or Soy Bean Patties
These vegetarian patties are ideal for the vegetarian who wants to have a hamburger, and would be great as a filling for my [link http://recipeyum.com.au/noodle-burgers-filled-with-field-mushrooms-and-meatless-cheeseburgers/ noodle burgers].
I used frozen edamame beans, and you could also buy soy beans in a can from Asian stores. If using these, do not add the water but just put the beans with the liquid in the blender.
They are also ideal as a meal with chips and salad or use some tomato sauce or mustard as a dip for them.
Preparation Time: 10 minutes (plus shelling)
Cooking Time: 15 minutes
Makes: 3 servings
Ingredients
165 g shelled edamame (or can soy beans)
¼ cup flour
¼ cup wallnuts, finely chopped
3 spring onions, or shallots
Bit of basil
Less than ¼ tsp mixed herbs
½ tbsp soy sauce
1 cup bread crumbs
Less than ¼ cup sesame seeds
About ¼ cup oil
Method
Peel the edamame or soy beans if yours are not peeled.
Place them in a blender with about 100 ml of water and blend to a smooth paste.
Put in a bowl and add flour, walnuts, chopped spring onions, basil, mixed herbs, soy sauce, and mix well.
Divde the mixture evenly into about 4 or 5 portions.
Dip each one into breadcrumbs and sesame seeds and press on firmly.
I covered them and put them in the fridge for about 30 minutes, however this is not strictly necessary.
Heat the oil and cook the patties until golden brown on each side.
Serve with a green salad, as a hamburger, or with hot vegetables.
