Eggless Lemon Curd

Eggless Lemon Curd

Usually, lemon curd is made using eggs. Here I am using corn flour instead. The curd is really delicious with a rich lemon flavour.

You can spread this on toast, pancakes or use as toppings in cupcakes.

Preparation Time: 5 minutes
Cooking Time: 15 minutes
Makes: 1/2 - 3/4 cup

1/2 cup sugar
3 tbsp cornstarch
1/4 cup water
1/4 cup lemon juice
2 tsp grated lemon zest
1 tbsp butter
Pinch of turmeric powder (for colour)

Zest the lemon first and then squeeze them for the juice.

Whisk together water, sugar and cornstarch in a pan. Bring it to boil over medium heat until the mixture becomes thick.

Remove from heat. Add the butter and lemon juice and mix well.

Then add the lemon zest and turmeric powder. Mix well until the butter is completely dissolved and curd is yellow.

Allow it to cool at room temperature. This can be refrigerated for a few days.
