Pumpkins are in season so let's make the best of it by making this soft and moist pumpkin bread. This recipe does not require any fancy ingredients and is healthy at the same time. If you are not a fan of pumpkins, don't worry you won't even taste the pumpkin in this recipe.
Ingredients 1 cup pumpkin puree ( I used fresh homemade puree)
1 cup self-raising flour
1 cup brown sugar
1/3 cup olive oil
1 tbsp ground flax seed
11/2 tbsp or mixed spices ( cinnamon powder, ginger powder, nutmeg powder, garam masala) or pumpkin pie spice.This measurement can be altered to your taste.
1 tsp vanilla extract
pinch of salt
1/2 cup walnuts
Aluminium foil for lining the baking tray (optional)
Mix 2-4 tbsp water with the ground flax seed and make a paste)
In a mixing bowl mix all the ingredients except the flour with a mixer.
Next mix in the flour.
Pour the batter on a greased baking tray lined with aluminium foil.
Sprinkle the walnuts evenly and bake in a pre-heated oven for 50 mins at 180 degrees centigrade.
Cut into squares and serve as a tea time snack or pack in your lunch boxes.
You can add some chocolate chips for a sweeter taste.
