This is a great vegetarian dish. They can serve as a quick snack, lunch box addition or a side for a main meal.

Makes: 4 servings
Ingredients
1 large eggplant
1 egg
1 cup of bread crumbs
1 tsp crushed garlic
1 tsp parsely
1 tsp chilli flakes
2 tbs parmesan cheese
salt and pepper
oil spray
Method
Cut the eggplant into 1cm slices.
On a large plate, combine the garlic, bread crumbs, parsely, chilli and parmesan cheese.
Grease a frypan and have it on a medium heat.
Coat each slice of eggplant with the egg wash, then cover with the bread crumb mixture.
Repeat until all slices have been crumbed.
Once the frypan is warm, start to cook the eggplant pieces.
Keep it on a medium heat so the eggplant and crumbs do not burn.
After approx. 5 mins or when the eggplant is starting to soften, flip and cook on the other side.
Remove from the pan and place the eggplant onto some paper towl to remove any additional oil.
Cut into triangles and serve.
