Eggs in Coconut Curry

A mild flavoured curry inspired by a trip to Southern India.

Preparation Time: 5 minutes
Cooking Time: 15 minutes
Makes: 4 servings



Ingredients
5 hard boiled eggs
1 large onion, thinly sliced
2 tsp fresh ginger, thinly sliced
2 red chillies, deseeded and chopped
1 tsp curry powder
1-2 tomatoes, chopped
1 cup coconut cream
1/2 tsp tumeric powder
1 tsp garam masala powder
1/4 tsp mustard seeds
2 dried red chillies, chopped
1 tbsp sesame oil/coconut oil/peanut oil
Rice to serve

Method
  • Heat oil in a large sauce pan, adding mustard seeds and dried chillies when hot. Cook for 2-3 minute being careful not to burn them.



  • Add the onion and cook until soft.



  • Once the onion is soft, add the ginger, fresh chillies and curry powder, stir through, cooking for a couple of minutes.



  • Stir through the tumeric and garam masala.
  • Add the tomatoes and cook for a minute.



  • Mix in the coconut cream and allow to cook on a low heat for around 5 minutes.



  • When almost ready to serve, add the eggs and allow to cook for a minute. If eggs were cold when added, allow to simmer for longer.
  • Serve on a bed of rice.



  • NOTE
    Serve with some yoghurt or adjust the chillies if you don't like it too hot.
