Eggs in Coconut Curry
A mild flavoured curry inspired by a trip to Southern India.

Makes: 4 servings
Ingredients
5 hard boiled eggs
1 large onion, thinly sliced
2 tsp fresh ginger, thinly sliced
2 red chillies, deseeded and chopped
1 tsp curry powder
1-2 tomatoes, chopped
1 cup coconut cream
1/2 tsp tumeric powder
1 tsp garam masala powder
1/4 tsp mustard seeds
2 dried red chillies, chopped
1 tbsp sesame oil/coconut oil/peanut oil
Rice to serve
Method
Heat oil in a large sauce pan, adding mustard seeds and dried chillies when hot. Cook for 2-3 minute being careful not to burn them.
Add the onion and cook until soft.
Once the onion is soft, add the ginger, fresh chillies and curry powder, stir through, cooking for a couple of minutes.
Stir through the tumeric and garam masala.
Add the tomatoes and cook for a minute.
Mix in the coconut cream and allow to cook on a low heat for around 5 minutes.
When almost ready to serve, add the eggs and allow to cook for a minute. If eggs were cold when added, allow to simmer for longer.
Serve on a bed of rice.
NOTE
Serve with some yoghurt or adjust the chillies if you don't like it too hot.
