English Breakfast Cous Cous
With the cous cous taking the place of the fried bread, this side dish has the elements of a traditional English breakfast: bacon, mushrooms, eggs - the only thing missing is baked beans, which I think you'll agree, you probably don't want with cous cous. Based on the brands I used, each portion is about 126 calories.
Preparation Time: 30 minutes
Cooking Time: 15 minutes
Makes: 6 servings
Ingredients
250g cous cous
100g white mushrooms
60g brown onion
3 rashes of back bacon
2 tbsp vinegar
1 tbsp parsley
6 quail eggs (or 2 chicken eggs if you prefer)
300ml boiling water
Method
Pour the boiling water onto the cous cous, stir it well, then leave it to rest for five minutes.
Fry the bacon for five minutes on either side.
Chop the mushrooms and onions, then fry in a pan.
Chop up the bacon and mix with the vegetables.
Fry and scramble the eggs, then mix in.
Sprinkle the parsley and drizzle the vinegar into the mixture.
Stir all the ingredients into the cous cous and dish out into serving bowls.
