English Breakfast Cous Cous

With the cous cous taking the place of the fried bread, this side dish has the elements of a traditional English breakfast: bacon, mushrooms, eggs - the only thing missing is baked beans, which I think you'll agree, you probably don't want with cous cous. Based on the brands I used, each portion is about 126 calories.

Preparation Time: 30 minutes
Cooking Time: 15 minutes
Makes: 6 servings

Ingredients
250g cous cous
100g white mushrooms
60g brown onion
3 rashes of back bacon
2 tbsp vinegar
1 tbsp parsley
6 quail eggs (or 2 chicken eggs if you prefer)
300ml boiling water

Method



  • Pour the boiling water onto the cous cous, stir it well, then leave it to rest for five minutes.



  • Fry the bacon for five minutes on either side.





  • Chop the mushrooms and onions, then fry in a pan.



  • Chop up the bacon and mix with the vegetables.



  • Fry and scramble the eggs, then mix in.
  • Sprinkle the parsley and drizzle the vinegar into the mixture.
  • Stir all the ingredients into the cous cous and dish out into serving bowls.
