English muffins are quite different from the sweet American muffins we most associate the word with. Instead English muffins are a type of bread and traditionally cooked on a griddle like Welsh cakes. They are somewhere in between a roll and a scone. They were originally called 'muffings' wen the first recipe by Hannah Glasse was written in 1747, but the American renamed them English muffins.
English muffins make a great variation on a full English breakfast. Just fill it with bacon, a fried egg, and tomatoes, and you're in heaven. They also go well with eggs Benedict.
Preparation Time: 2 hours 30 minutes
Cooking Time: 10 minutes (each)
Makes: 8 servings
Ingredients
350g white bread flour
100g plain white flour
7g fast action yeast
½ tsp salt
225ml water
150ml almond milk
2 tbsp coconut oil
Method
Mix together all the ingredients (excluding the coconut oil) to form a dough.
Knead the dough for ten minutes.
Cover the dough in cling film and leave to prove for an hour.
Divide the dough into eight rolls.
Place the rolls on a baking tray, put another baking tray on top, and prove for another 30 minutes - 1 hour.
Fry the muffins in coconut oil for five minutes on sac side.
