Epic Three-Layer Cake

The Three-Layer Cake makes a rare appearance, but when special occasions approach I whip up this rather epic cake. It is a standard sponge mixture, but it's the little things that make it quite spectacular.

Preparation Time: 5 minutes
Cooking Time: 30 minutes
Makes: 8 servings

330g butter
330g sugar
330 flour
1 tsp Baking Powder
4 eggs
Icing sugar
Strawberry Jam
Edible, Silver Glitter

Buttercream ingredients:
Splash of milk
50g cold butter
50g icing sugar


Cream together the butter and sugar in a large mixing bowl.

Sift the flour together with the cinnamon and baking powder.

Add the flour mixture to the butter and sugar, whisk until combined.

Add the eggs one by one, whisking after each, until fully combined.

Pour the mixture into two lined cake tins and bake in the oven for 30 minutes at 180 degrees (fan oven) or gas mark 4.

Remove the cake tins from the oven and allow to cool on a wire rack for at least 30 minutes.

Repeat final step with the last of the cake mix.

Make the buttercream by whisking butter icing sugar and a dash of milk.

Spread the 'bottom' cake layer with the buttercream.

Spread the 'middle' layer with jam.

Place the top layer on the middle layer and dust with icing sugar.

Cake, icing,

Cover the whole top layer of the sponge with icing sugar - make it a heavy dusting to look professional.

Once the layers are sandwiched together present on a serving plate and enjoy.

It is absolutely essential to sift the flour to ensure a light and fluffy sponge. You can really taste the difference - even when you lick the spoon!

Cinnamon, or even a little nutmeg gives a subtle hint of something 'extra' in the sponge. Always add when baking for occasions.
