Extra Crunchy Coleslaw

Summer coleslaw is one of my favourites salads, and wth the addition of the fried noodles and almonds I love it even more now. Hope you will love it too.

Extra Crunchy Coleslaw


Preparation Time: 5 minutes
Cooking Time: 0 minutes
Makes: 4 side serves

Ingredients
For the Dressing
3/4 cup of whole egg mayonnaise
1 tablespoon of Dijon mustard
1 tablespoon of apple cider vinegar
1 tablespoon of lemon juice
1 teaspoon of sugar
Pinch of salt

For the Salad
1 packet of Chans original fried noodles
3 cups of shredded red cabbage
3 cups of shredded green cabbage
1 large carrot grated
1/2 cup of almonds

Method
  • Finely shred the cabbage place in a mixing bowl.
  • Grate carrot and add to the cabbage.
  • In a small bowl add mayonnaise, mustard, vinegar, lemon juice, sugar and salt and mix well.
  • Pour dressing into mixing bowl and mix well.

  • Pour dressing into the mixing bowl and mix well


  • Roughly chop almonds and set aside.
  • The noodles are of the extra crunch. Add these in just before serving. Stir though and place into a serving bowl.
  • Place almonds on top and serve.
