Fail Safe Fluffy Pancakes With Berry Compote

Finally, fail safe, fluffy pancakes using ingredients most of us have at home. No buttermilk required. The berry compote is warm, gooey and a delicious topping. These are great for breakfast, brunch, dessert or as comfort food anytime. Enjoy.

Preparation Time: 10 minutes
Cooking Time: 25 minutes
Serves: 4

Ingredients

For the pancakes
2 cups self raising flour
1/4 tsp bicarbonate of soda
1/2 tsp baking powder
1/8 tsp salt
1 egg
3 tbsp caster or raw sugar
1 1/2 cups milk (lactose free if required)
1 1/2 tbsp vanilla essence (optional)
2 tbsp butter or margarine (use nuttelex for lactose free)

For the berry compote
1 1/2 cups frozen strawberries
3/4 cups frozen blueberries
2 tbsp caster or raw sugar (add more if you like it sweet)
1 tbsp fresh lemon juice
Fresh strawberries, to serve

Method

For the pancakes
  • Whisk the flour, baking powder, bicarbonate of soda and salt until well combined. Set aside.
  • In a separate bowl, beat the egg for 1 minute until light and fluffy with a hand or electric mixer. Add the sugar and beat for 2 minutes until creamy.

  • Gradually pour in the the milk and vanilla essence and stir to combine.
  • Sift the dry ingredients into the egg mixture and gently fold until just combined. Do not over mix as the gluten in the flour will develop and make your pancakes rubbery, chewy and not fluffy.

  • Heat a frypan on medium, add the butter (or alternative) and melt. Tilt the pan so the melted butter covers the entire surface of the pan.
  • Pour 1/4 cup of the pancake batter onto the pan.
  • Flip the pancake when large bubbles start to break on the surface and cook on the other side until golden brown. Repeat with the remaining batter.

  • For the berry compote
  • In the meantime, while the first pancake is cooking, place the strawberries, blueberries, sugar and lemon juice into a microwave safe bowl and stir to combine. Place in the microwave for 7 minutes. Set aside.

    To serve
  • Place pancakes in a stack and spoon compote on top and fresh strawberries on thie side. Spoon cream or ice cream on the side, if desired.

  • Tips
  • Use the first pancake as your test pancake to set the temperature of the pan.
  • Reduce the microwave time to 5 minutes and cook in 30 second bursts to achieve the right consistency, if using fresh berries in the compote.
