Falafels are a Middle Eastern snack traditionally made from either lava beans or chickpeas. They can be eaten on their own as finger food or as part of a meal. Falafels are often eaten inside flatbreads such as pita, but I also think that they go great with curry or at a barbecue.
Falafels are full of protein and fibre, which makes them a good vegetarian and vegan option. They are often deep fried, but that pretty much ruins the health benefits; here I have shallow fried them and used coconut oil so that they remain just as tasty, but also good for you.
Preparation Time: 1 hour 15 minutes
Cooking Time: 10 minutes
Makes: 9 servings
Ingredients
1 x 410g tinned chickpeas (drained 240g)
2 tsp cumin seeds
1 tsp turmeric
1tbsp mixed herbs
pinch of ground pepper
2 tbsp olive oil
2 tbsp coconut oil
30g wholemeal plain flour
Method
Drain the chickpeas, blitz in a food processor, and then add the herbs, spices, and olive oil before blitzing again.
Shape the mixture into golf ball size balls before putting in the fridge to chill for an hour.
Roll the balls in flour and then fry in coconut oil for five minutes on each side.
