Family Quiche Lorraine

Quick and easy mid-week meal or perfect for lunches.

Preparation Time: 20 minutes
Cooking Time: 40 minutes
Makes: 6-8 servings

Ingredients
1.5 sheets of puff pastry
6 eggs
1 cup of bacon pieces
1/2 cup of cream
1/2 cup of milk
1/2 cup of spring onions, chopped
1/2 cup of grated tasty cheese
1 tomato
1/2 tsp garlic, crushed
pepper & salt

Method
  • Preheat the oven to 180 degrees.
  • Grease a baking dish and line it with your pastry. Make sure there is some overhang as the pastry will shrink.
  • Using baking weights or pasta, weigh down the centre and blind bake for 20 minutes.
  • While the pastry is cooking, sauté the bacon pieces in a small pan. Put aside to cool.
  • While the bacon is cooling, collect your ingredients to make the filling.
  • Whisk the 6 eggs, cream, milk, garlic and salt and pepper.
  • Once they are combined, stir in the spring onions, cheese and bacon.
  • When the pastry has been removed from the oven, take out the baking weights.
  • Pour in the filling and sprinkle a little extra cheese on top.
  • Thinly slice the tomato and lay it on top.
  • Return the quiche to the oven and bake it for about 40 minutes or until golden brown and set.
  • Serve with salad, chips or by itself.
