Fat Veggie Wrap

There is nothing better than a big wrap filled with vegetables, salad and dip. It is my absolute facourite go to lunch. Doesn't matter if it is stuffed with falafel, salad, potatoes, veggies, patties or roast vegetables, I am in heaven.

Preparation Time: 5 minutes
Cooking Time: 5 minutes
Makes: 2 servings

Ingredients
2 wraps
2 tbsp [linkhttp://recipeyum.com.au/kale-and-pepita-pesto/ kale pesto]
6 mushrooms
1/2 small zucchini
1 carrot
1 tomato
8 beetroot rings
2 handfuls of rocket
Seasoning

Method
  • Slice the mushrooms and zucchini and place them on your sandwich press to quickly cook.
  • This is also a super fast way to cook hash browns and fried eggs

  • Meanwhile slice your tomatoes and carrots and spread 1 tbsp of [linkhttp://recipeyum.com.au/kale-and-pepita-pesto/ kale pesto] on each wrap.

  • Fill each wrap with rocket, beetroot, carrot, tomato, seasoning and the cooked mushrooms and zucchini. Wrap tightly and place in the sandwich press (or eat fresh).

  • Once toasted, cut in half and enjoy on its own or with a side of [linkhttp://recipeyum.com.au/oil-free-chippies/ chips]!
