Fattoush Halloumi Salad

Fattoush is a Lebanese salad, usually made with vegetables and toasted pitta bread. I've mixed it up a little with fresh crunchy salad, wholegrain toasted pitta and made more filling with pan fried halloumi. It's great for lunch, a light meal or packed into a lunchbox as a change from a sandwich.



Preparation Time: 15 minutes
Cooking Time: 5 minutes
Makes: 2 servings

Ingredients
1 wholegrain pitta bread
1 small cucumber
12 cherry tomatoes
1/2 red pepper
1/2 yellow pepper
3 tbsp chopped fresh parsley
200g halloumi

Dressing
2 tbsp extra virgin olive oil
2 tbsp lemon juice
1/4 tsp ground cinnamon
Salt & pepper

Method
  • Slit open the pitta bread and toast on both sides until crunchy. Break into pieces and set aside.
  • Chop and slice the cucumber, tomatoes, peppers and herbs and mix together in a bowl.
  • Mix all the dressing ingredients together and then toss through the salad.
  • Cut the halloumi into chunks and pan fry until golden on the outside.
  • Mix through the toasted pitta bread just before you serve and then sprinkle the halloumi on top.
