Fava Bean Dip
Freshly shelled fava or broad beans cry out spring. Fortunately you can buy the beans snap frozen making them readily available all year round (just remember to peel the soft outer skin).
The naturally sweet and tender beans are perfect in salads or simply eaten as is. A little lemon juice, extra virgin olive oil, salt and pepper is all that’s required to dress these little beauties. Puree the lot and you have a wonderfully vibrant, sweet and refreshing dip to dazzle your family and friends with.
This will excite the senses with its vibrant colour and fresh and zingy taste.

Makes: 1 Cup
Ingredients
250g Fresh or Frozen Shelled Fava Beans (Broad Beans)
2 Tablespoons Lemon Juice
1 Teaspoon Lemon Zest
2 Tablespoons Extra Virgin Olive Oil
Salt and Black Pepper to taste
Mint and Fresh Chilli to garnish

Fava Beans or as theyre more commonly known in Australia Broad Beans, can be bought fresh or snap frozen.
Method
Combine the shelled fava beans, lemon juice, lemon zest, extra virgin olive oil, salt and pepper into a food processor.

Process the ingredients until smooth.
Transfer the fava bean dip to a serving bowl.
Garnish with mint and fresh red chilli.
The fresh sweetness of this dip pares perfectly with crudités such as cucumber and carrots or with some home-made Sesame Crackers .
A simple and quick recipe that will bring a wow factor to the dinner table.
