Ferrero Nutella Cheesecake

For the chocolate lovers out there, indulge in this amazing dessert filled with chocolate, a thin layer of Nutella ganache, and crushed Ferrero Rocher for topping.

Preparation Time: 40 minutes
Waiting Time: 120 minutes
Makes: 8-10 servings

2 cups digestive biscuits/Graham crackers, coarsely crushed
4 tbsp melted butter
1/3 cup sugar

500g Philadelphia cream cheese, softened
200g dairy milk chocolate
1/2 cup thickened cream
2 tsp espresso shot
10 hazelnuts, crushed

Nutella Ganache:
3 tbsp Nutella
1/3 thickened cream

Grease and line a 20cm cake tin with baking paper.

In a food processor, grind hazelnuts coarsely. Leave them aside. Then, blitz the biscuits till fine and add the melted butter. Mix well.

Press the crumbs firmly to fill the base. Put it in the refrigerator while you prepare the cheesecake filling.

In a big dry bowl or electric mixer, beat or whisk cream cheese and sugar until smooth. Then, add thickened cream and continue mixing.

Prepare a double boiler and melt the milk chocolate over it. Add melted chocolate and crushed hazelnut to the mixer and mix them until well combined.

Spoon or pour the cheesecake filling over the pre-prepared biscuit base. Set it in the refrigerator for at least 2 hours, but preferably overnight.

In a microwave safe bowl, heat thickened cream for 20 seconds. Add Nutella to the cream and mix well.

Remove the cake tin carefully.

Pour Nutella ganache from the middle and let it flow. If it doesn't flow, spread the ganache evenly.

Depending on how you would like to decorate the cake - I used a zip lock bag to crush Ferrero Rocher chocolates and then sprinkle them on top.

Ready to serve.
