Festival Lemon Rice
Lemon Rice is an extremely popular South Indian one pot dish, specially prepared during the festival time. The dish is quite easy to prepare and is popular for it's refreshing and tangy taste.

Preparation Time: 5 minutes
Cooking Time: 10 minutes
Makes: 4-5 servings
Ingredients
1 cup rice
3-4 tsp lemon juice
1 tsp chana dal (pigeon pea)
1 tsp mustard seeds
1 tsp grated ginger
2 tsp urad dal (black gram)
2 tsp peanuts
3-4 red chillies
4-5 curry leaves
1 finely chopped onion

1 pinch asafetida
1 pinch turmeric powder
1 tsp oil
Finely chopped coriander
Method
Heat some oil in a pressure cooker
Add chana dal (pigeon pea), asafetida, mustard seeds, ginger, red chillies, urad dal (black gram) and fry for 2-3 minutes.

Now add chopped onions and turmeric powder to it. Allow it to cook till it turns golden brown in color.

In the meantime, wash the rice and drain the excess water.
Transfer the rice to the cooker and mix it well with the above ingredients.

Squeeze in some lemon juice.
Add 2 glasses of water and some salt to taste.

Close the lid of the cooker and let it cook for around 5-7 minutes.

Switch of the heat and transfer the rice into a serving plate, garnish it with coriander and serve it hot.
