Feta Onion and Spinach Quiche

Tasty hot or cold. Feta, Onion and Spinach Quiche

If you have a feta fetish this Feta, Onion and Spinach Quiche will be perfect for lunch or dinner. It is vegetarian and can be served hot or cold. A Garden Salad is the perfect accompaniment.

Preparation Time: 20 minutes
Cooking Time: 10 minutes for the base
30 minutes for the quiche
Makes: 5 servings

Ingredients
2 large frozen sheets of shortcrust pastry, thawed
2 cups of sliced fresh spinach, washed and dried
1 cup crumbled feta cheese
1/2 diced onion
4 eggs
1/2 cup of sour cream
3/4 cup milk
1/2 teaspoon salt
1/2 teaspoon ground pepper
Vegetable oil


Method
  • Preheat oven to 200c.

  • Lightly spray a quiche dish with vegetable oil and line with shortcrust pastry. Pinch the edges at the top.

  • Cook the pastry in the oven for 10 minutes.

  • Place the onion in a frypan over medium heat with a small amount of vegetable oil until it begins to brown. Set aside.

  • Cook onion over medium heat


  • Place the spinach in the frypan over medium heat with a small amount of vegetable oil until it begins to wilt. Set aside.

  • Cook spinach over medium heat until it begins to wilt


  • Place eggs and milk in a bowl. Whisk well.

  • Whisk eggs and milk


  • Add sour cream, spinach, onion, pepper and salt. Mix well.

  • Mix the ingredients well


  • Pour mixture into pastry crust.

  • Pour mixture into pastry crust


  • Cook in the oven at 200c for 30minutes or until set.

  • This quiche can be frozen and enjoyed later.
