Fig and Cinnamon Slice
I like figs however they are just so expensive to buy, so I have used dried figs instead of fresh ones for this slice.
Delicious with cream and a cup of tea or coffee, they are not the simplest to make, however the end result is quite unusual and something just a bit different in taste.
Preparation Time: 10 minutes
Cooking Time: 55 minutes
Makes: About 20 pieces
Ingredients

125 g unsalted butter
55 g coconut sugar (or light brown sugar)
1 tsp ground cinnamon
1½ cups plain flour
1 cinnamon stick
½ cup castor sugar
Method
Preheat the oven to 160° fan forced. Line an 18 x 27 cm baking tin or dish with baking paper, leaving some hanging over the long sides.
In an electric mixer or similar, beat the butter, coconut sugar and cinnamon until it is light and fluffy.
Add the flour and either beat on very low or beat it with a spoon.
Press this mixture into the prepared tin.
Bake for 25 minutes and then allow it to cool a bit.
In a saucepan, put the dried figs, castor sugar and the cinnamon quill, and add 1½ cups boiling water.
Mix together and bring to the boil. Lower heat and cook for about 20 minutes or until the figs are soft, and some of the water is reduced.
Take out the cinnamon quill and put the mixture into a processor or blender.
Blend in short bursts until it is a smooth mixture.
Pour this mixture into the slightly cooled base and bake for a further 10 minutes or until it is set.
Cool in the tin, and when cool, lift the baking paper and cut the slice into squares.
Serve with cream if desired!
I kept the leftovers in the fridge as am not sure if the hot weather would affect it if left in the pantry.
