A tasty pasta doesn't need to be covered in a creamy sauce or drenched in olive oil. In fact, you can make a practically fatless pasta dish that is absolutely delicious. I took a recipe and then took out all the meat, oil, and fat, replacing it with healthier and less calorific alternatives. What I ended up with was a fruity fig pasta that works out at about 336 calories per portion.

Makes: 4 servings
Ingredients
300g spaghetti
200g shelled chestnuts
3 fresh figs
1 lemon
1 clementine
3 tbsp mango vinegar
1 tsp dried rosemary
Method
Pre-heat the oven to 180 ༠C/ 160 ༠C fan/350 ༠F/4 Gas.
Zest and juice the lemon and clementine.
Chop the figs and chestnuts.
Mix the figs, chestnuts, zest, rosemary, and one tablespoon of vinegar together.
Bake in the oven for ten minutes.
Simmer the spaghetti in boiling water for thirteen minutes.
Drain and chop the pasta to your desired length.
Stir in the lemon juice, two tablespoons vinegar, and the fig mixture.
