Fig Tart

Usually I don't like mixing fruit and cheese, but figs and goat's cheese simply go together. This savoury tart is a delicious vegetarian that will go down a treat for dinner.

Preparation Time: 30 minutes
Cooking Time: 45 minutes
Makes: 6 servings

Ingredients
200g plain wholemeal flour
100g margarine
4tbsp water
2 eggs
75g creme fraiche
75g salad leaves
120g goat's cheese
1 tsp thyme
125ml almond milk
1tbsp grated Granda Pandano cheese (or Parmesan if you can't find it)
5 figs

Method
  • Pre-heat oven to 200 & #3872 ;C/ 180 & #3872 ;C fan/375 & #3872 ;F/5 Gas.
  • Blend the flour, margarine, and water together in a food processor to make a dough, then leave it to chill in the fridge for about ten minutes.



  • Blend together the creme fraiche, goat's cheese, eggs, milk, thyme and half the salad leaves in the food processor.



  • Take the pastry out of the fridge and roll it out into a tart tin.



  • Blind bake the pastry case for fifteen minutes, then lower the temperature by 20 & #3872 ;C/25 & #3872 ;F/1 Gas.
  • Pour the mixture into the pastry case.



  • Halve the figs and place on top of the tart, then scatter the grated cheese.



  • Scatter the remaining salad leaves on top, and then bake for 30 minutes.
