Fillet Steak Wrapped With Crispy Bacon On A Bed Of Mango Mash
The secret of this recipe is to buy fillet steak and you only need small pieces if they are cut thickly which is how they will be the nicest.
It is an old fashioned recipe, that I have adapted and cooked mainly on the barbecue, and I served it on a bed of mashed fresh mango, as well as buffalo dry roasted chips.
I also added some barbecued fresh pineapple and all these flavours together turned out excellent.
Preparation Time: 10 minutes
Cooking Time: 55 minutes, including chips
Makes: 1 serving
Ingredients
1 small piece of thick fillet steak
1 tbsp soy sauce
1 rasher bacon
½ fresh mango
1 slice fresh pineapple
2 potatoes
Method
Soak the steak in the soy sauce for at least 15 minutes.
Cook the whole potatoes in the microwave for about 2 minutes or until just starting to lose their firmness.
Slice the potatoes into big chunks, place on baking paper on a tray, and sprinkle with a bit of oil and spices of your choice, as well as some salt.
Mash the mango roughly.
When the chips are almost done, put the steak on the barbecue on high.
Cook to your liking, but do not overcook as it will spoil a lovely piece of steak. I always have mine medium - rare.
After a few minutes on each side, place it on the side so that the bacon gets crispy, and turn this till all the bacon is done. At the same time, put the pineapple slice on the hot plate.

Put a few spoons of the mango mash on a plate, cover it with the steak, add the pineapple slice, and the chips, and serve!
I did make a salad however could not eat it -a very enjoyable meal.
