For those of us in the cooler season at the moment, this recipe is fantastic to warm you up at night. No rice needed as you add a low GI potato to the curry instead. The garlic and onion is also great to possibly fight off the elusive cold.
Ingredients 1 brown onion
2 cloves of garlic
1 cup mixed vegetables
1 fillet basa fish/any white fish
3 chopped Carisma low GI potatoes
1 tin coconut milk
1/2 cup water
1 tbsp olive oil
1 tsp Keen curry powder
1/2 tsp turmeric
Place the olive oil, garlic, onion, water, coconut milk and potatoes in a big pot.
Add the turmeric and curry powder.
Boil for 15 - 20 minutes until potatoes are almost cooked.
Then add mixed vegetables and fish and cook for further 10 - 15 minutes until cooked.
