Fish Grenobloise
This is a classic French dish which has a sauce of butter, capers, parsley, and pieces of lemon. It's very simple and very delicious.
Preparation Time: 10 minutes
Cooking Time: 20 minutes
Makes: 2 servings
Ingredients
2 large potatoes peeled and thickly sliced
2 star anise
2 fillets of firm white fish eg. Snapper or Rockling
2 handfuls of baby spinach leaves
2 tablespoons of butter
1 handful of croutons
1 tablespoon of slivered almonds
6 pieces of peeled lemon
2 teaspoons of drained capers
8 semi dried tomatoes
1 small handful of fresh parsley
olive oil
salt and pepper
Method
Place the potatoes into a saucepan and cover with water. Put the star anise into the saucepan and bring to the boil. Cook until the potatoes are soft.
Meanwhile season the fish with the salt and pepper, put a little olive oil into a fry pan and fry fish on both sides until cooked about 3-4 minutes a side.
Take the fish out of the pan when done and begin to build your sauce.
In the same pan as the fish was in start by melting the butter then add all the other ingredients including the parsley. Stir regularly to incorporate the flavours. About 5 minutes.
Take the cooked potatoes out of the saucepan and place on a plate. Top the potatoes with the fish then spoon over your sauce.
