Fish Grenobloise

This is a classic French dish which has a sauce of butter, capers, parsley, and pieces of lemon. It's very simple and very delicious.

Preparation Time: 10 minutes
Cooking Time: 20 minutes
Makes: 2 servings

Ingredients
2 large potatoes peeled and thickly sliced
2 star anise
2 fillets of firm white fish eg. Snapper or Rockling
2 handfuls of baby spinach leaves
2 tablespoons of butter
1 handful of croutons
1 tablespoon of slivered almonds
6 pieces of peeled lemon
2 teaspoons of drained capers
8 semi dried tomatoes
1 small handful of fresh parsley
olive oil
salt and pepper

Method
  • Place the potatoes into a saucepan and cover with water. Put the star anise into the saucepan and bring to the boil. Cook until the potatoes are soft.
  • Meanwhile season the fish with the salt and pepper, put a little olive oil into a fry pan and fry fish on both sides until cooked about 3-4 minutes a side.
  • Take the fish out of the pan when done and begin to build your sauce.
  • In the same pan as the fish was in start by melting the butter then add all the other ingredients including the parsley. Stir regularly to incorporate the flavours. About 5 minutes.
  • Take the cooked potatoes out of the saucepan and place on a plate. Top the potatoes with the fish then spoon over your sauce.
