Flambeed Bananas

Both refreshing and warming at the same time, these flambéed bananas are the equivalent of a grown-up banana split.

Preparation Time: 15 minutes
Cooking Time: 25 minutes
Makes: 3 servings

Ingredients
4 bananas
150g creme fraiche
150ml water
¼ tsp vanilla extract
1 tbsp honey
20g flaked almonds
100g dried apricots
1 tbsp lemon juice
2 tbsp dark rum
2 tbsp brandy

Method



  • Heat the apricots in a saucepan with water and lemon juice for ten minutes.



  • Puree the apricots in a food processor.



  • Toast the almonds under the grill for about a minute.



  • Whip the creme fraiche with honey and vanilla extract.

  • Stir in the almonds and then chill in the fridge.

  • Slice the bananas lengthways, then fry them in butter until golden.

  • Pour over the rum and brandy.



  • Stir in the apricot puree.



  • Take off the heat and put the banana mixture in a bowl.



  • Remove the creme fraiche from the fridge and pour over the bananas.
