I'm not vegan or sensitive to dairy, but I make this version of banana bread for a less dense treat of my favourite dessert.
Preparation Time: 5 minutes
Cooking Time: 40 minutes
Makes: 4 servings
Ingredients
2 ripe bananas
150g ground almonds
100g dairy free butter
150g soft muscovado sugar
3 medium eggs
1 tblsp mixed spice
OR
1 tsp cinnamon and 1 tsp nutmeg
Pinch of salt

Method
Mash the bananas in a bowl.
In a seperate bowl mix the sugar and butter together.
Add the ground almonds, mixed spice, and baking powder to the bowl and mix together.
Add the eggs one by one, whisking after each.
Add the mashed bananas and mix until fully combined.
Pour into a greased cake tin/baking tray/loaf tin.
Place in the oven for 40 minutes gas mark 4/180 degrees.
Remove from the oven, slice into squares and enjoy.
