
Delicious and indulgent chocolate strawberry cake
Fudgy chocolate and fresh strawberries make this cake a moist, delicious and indulgent dessert. This cake is quick to prepare and is a great celebration cake topped with chocolate dipped strawberries.
Preparation Time: 10 minutes (including time to prepare the strawberries or 5 minutes without)
Cooking Time: 40 minutes
Serves: 1 cake
Ingredients
190 g butter (or Nuttelex if lactose free)
3/4 cup cocoa (or cacao)
1 tbsp vanilla essence
1 cup almond meal
6 eggs
1 1/3 cup packed brown sugar
2 cups chopped strawberries
Icing sugar, to dust (optional)
12 - 16
chocolate dipped strawberries, to decorate (optional)
Method
Preheat the oven to 165 degrees. Line or grease a 24 cm cake tin with baking paper.
Make the
chocolate dipped strawberries and refrigerate to set until ready to serve. Small to medium sized strawberries are best, I used large as that is all that was available.
Beat the eggs and brown sugar until the mixture doubles in size.
Stir the butter, vanilla essence and cocoa in a saucepan on low heat, about 1 minute.

Add the cocoa mixture and almond meal to the eggs and gently fold to combine. Add the strawberries and stir to combine.

Pour the batter into the cake tin and bake for 35-40 minutes until set. Completely cool in the cake tin.
Remove from the cake tin, dust with icing sugar and top with chocolate dipped strawberries before serving.
