Flourless Oat Pancakes

This is a healthy gluten free pancake recipe that everyone will enjoy. Enjoy the subtle flavours with all of your favourite toppings.



Preparation Time: 5 minutes
Cooking Time: 15 minutes
Makes: 4 servings

Ingredients
1 Large Ripe Banana
2 cups Rolled Oats
2 eggs
1 cup Water^
Butter for frying
Golden Syrup or other condiments to serve with

Water can substituted by an additional egg if you'd like firmer pancakes. I prefer less omelet-like pancakes.

Method
  • Crack eggs into a medium sized bowl and whisk thoroughly.

  • Mash banana with a fork, ensuring there are no large clumps.



  • Add banana, oats and water the egg and combine.
  • Melt a dollop of butter over low heat in a frypan. Pour mixture onto pan. I make my pancakes about 10cm in diameter.



  • When bottom browns carefully flip over and brown other side.

  • Serve drizzled with golden syrup.
