Delicious Flourless Orange Cake, the perfect recipe for those looking for a sweet gluten-free dessert.

Makes: 6-8 servings
Ingredients
2 oranges
3 eggs
1 cup caster sugar
3 cups almond meal
1 tsp bakng powder
Orange Syrup
1 orange

Method
Preheat oven to 170°C, grease and line a cake pan (I used a 18cm round tin).
Place oranges in a saucepan and cover with cold water.
Bring to the boil over medium heat and cook for 15 minutes or until the oranges are tender and drain.
Return the oranges over the heat and cover with cold water again.
Bring to the boil, cooking for 15 minutes and drain.
Refresh the oranges under cold water.
Coarsely chop the oranges and remove any seeds.
Process the oranges until smooth.
Meanwhile beat together the eggs and sugar until thick and pale.
Add in the orange, almond meal and baking powder.
Fold until combined well.
Pour into the prepared cake pan.
Syrup
Meanwhile grate the zest and juice the orange.
Place the zest in a saucepan of boiling water and cook for 5 minutes or until soft. Drain and return to the saucepan.
Add in the juice and sugar.
Cook over low heat stirring for 2-3 minutes or until the sugar dissolves and thickens.
Drizzle the syrup over the cake to serve.
