Fluffy Eggy Bread

Eggy bread is a childhood favourite of mine which I had forgotten about really; until I became a mum and wanted to offer a bit more variety at lunch time. I now make this for me and my son and he loves it as much as me.

It's simple and tasty and also a good, filling breakfast or lunch.

Preparation Time: 2 minutes
Cooking Time: 4 minutes
Makes: 1 portion

2 eggs
2 slices of thick bread
Pinch of pepper
Little oil for cooking

Crack the eggs into a flat dish and whisk.
Add a little pepper.
Give the egg a good beating

Place one slice of bread into the dish to absorb the mixture.

Soak for about a minute, meanwhile heat the oil on a low heat.
Gently heat the oil

Turn the bread over, soaking the other side for a minute.
Pop the egg-soaked bread into the pan and cook on each side until golden, about 2 minutes each side.

Whilst cooking the first piece, start soaking the other slice of bread and then add to the pan.
Serve onto a warmed plate and enjoy.
Delicious served with crispy bacon and a drizzle of maple syrup
