Fluffy Pancakes with Berries

Delicious way to start the day.



Preparation Time: 10 minutes
Cooking Time: 25 minutes
Makes: 6-8 servings

Ingredients
Pancakes
3 cups self raising flour
3/4 cup caster sugar
2.5 teaspoons baking soda
3 eggs
1/4 cup vegetable oil
500 ml milk

Berry Compote
200g fresh, frozen or canned strawberries
150g fresh, frozen or canned raspberries

Method
  • Step 1
  • Mix the self raising flour, sugar and baking soda together.

  • Step 2
  • In a separate bowl mix the egg, oil and milk.

  • Step 3
  • Combine the wet and dry ingredients and whisk everything together until you have a smooth batter. Let stand for several minutes.

  • Step 4
  • Place a large frying pan on a medium heat and melt a tablespoon of butter. Use a small ladle to spoon the batter into the pan

  • Step 5
  • Cook for 1-2 minutes and use a spatual to turn them over when they start to get little bubbles on top. Pancakes are ready when they are slightly brown on both sides

    Compote
    Place all ingredients in a saucepan on a slow heat with sugar and cook until soft. Thicken with a little cornflour.

    If using canned berries, drain the liquid before placing in the pot. Let cool before serving.

    Hint: Serve with vanilla ice-cream or yoghurt
