Focaccia Bread

Focaccia is a delicious Mediterranean flatbread made with lots of olive oil to give it flavour. It is a particularly wet bread, so make sure to add the water gradually, and don't add extra flour. Based on the brands I used, each slice should be about 130 calories. Here are some of my bread making tips.

Preparation Time: 2 hours 40 minutes
Cooking Time: 15 minutes
Makes: 15 servings

500g bread flour
2 tsp yeast
2 1/2 tbsp olive oil
1 tsp mixed herbs
1/2 tsp salt
400ml water

Mix the flour, yeast, and salt together.
Create a well in the flour and pour in 2 tablespoons olive oil.
Gradually add 300ml water to form a dough, then knead for five minutes.
Gradually add the remaining water and knead for another five minutes.
Prove the dough for about an hour.
Punch down the dough and roll out into an oblong-like shape.
Prove the dough for about another hour.
Pre-heat the oven to 220 ༠C/ 200 ༠C fan/400 ༠F/6 Gas.
Create dimples in the dough with your fingers, then bake it in the oven.
Drizzle 1/2 tablespoon olive oil over the bread, then sprinkle the mixed herbs.
