I love to eat quiche but I had never made it before. This one is actually really good, and I know because it was eaten very quickly. We finished it up so quick I didn't even get the chance to take a photo of it sliced, but trust me you won't be disappointed.

Baked Quiche just out of the oven
Preparation Time: 15 minutes
Cooking Time: 40 minutes
Makes: 4
Ingredients
1 Pampas short crust pastry case
1 portion of frozen spinach (about 2 tablespoons cooked)
3/4 cups of grated four cheese blend
1/4 cup of self raising flour
1 cup of full cream milk
2 eggs
1 and a 1/2 tablespoons of butter
Method
Pre heat the oven to 160 degrees fan forced or 180 degrees conventional oven.
Take the pastry case from the packaging leaving it in its tin foil and place it on an oven tray.
Bake the pastry case for 10 minutes. This does not need to be blind baked.

Pastry after it has been in the oven 10 minutes
On the stove bring some water to the boil and add in the spinach portion and cook for about 2 minutes.
Drain the spinach and set aside for later.
In a bowl whisk together the eggs, butter, milk and flour.
Next add in the spinach and cheese and mix well.

This is the consistency of the filling
Remove the pastry from the oven and place it on the stove top to cool for a few minutes before adding the filling.
Add in the filling slowly and make sure it looks even.

The pastry filled before going into the oven
Now slowly place the quiche into the oven and bake for 40 minutes until golden and cooked through.
Remove the quiche from the oven and allow to cool. Once cooled you can test it by inserting a skewer.
Sometimes the skewer may have some cheese on it as it has melted so if it is not clean then check in another spot to be sure it's cooked.
Once it's cooked allow to cool for a few minutes before serving, or fully cool it down before placing in the fridge if you want to serve it the next day. 2-3 minutes in the microwave is all it needs if you are heating the whole quiche.
With this recipe you can also pour the mixture into 2 ramekins and bake it at 180 degrees for 30 mins and serve it this is also nice and I made this to have for breakfast.
