French Toast with Banana and Sweet Scrambled Eggs

I know that after reading the name you must think I am crazy but this actually works. It is something I have never seen done before but I really love it. It is something I wouldn't recommend eating often.

Preparation Time: 5 minutes
Cooking Time: 5 minutes
Makes: 1 serving

1 slice of white bread (thick preferred)
3 eggs
2 teaspoons of brown sugar
2 tablespoons of maple syrup
1 large banana
6-8 blueberries
Coconut oil spray
8 raspberries
4 tablespoons of water
2 tablespoons of raw sugar
1 tablespoon of plain flour

Start first by making a simple raspberry sauce to garnish the plate.
Wash the raspberries and blueberries and set blueberries aside.
In a small saucepan add the raspberries, raw sugar and two tablespoons of water.Cook raspberries over medium heat for one to two minutes. When raspberries are soft and the sugar has dissolved turn the heat down to low.
In a small bowl add the remaining two tablespoons of water and the plain flour and mix well to create a paste.
Add the paste to the raspberries and stir in immediately, stirring constantly for thirty seconds before taking off the heat.
Place raspberry sauce into a small bowl and set aside for later.

Spray a large fry pan with just enough coconut oil to coat the base, turn the heat on high.
In a square dish add the egg and whisk well. Dip the bread into the egg coating both sides making sure the bread is covered.
Add the bread to the fry pan and sprinkle the top side with one teaspoon of brown sugar. Cook until the egg has just set on the bread.
Flip the bread and sprinkle the other teaspoon of brown sugar on the bread.
Cook for 1 minute then flip again and leave it for about thirty seconds just to dissolve the sugar.
Remove the bread from the pan and place on a serving plate.
Spray the pan with more coconut oil and leave the heat on high.
Cut bananas in half length-ways and add them to the second fry pan and cook until they have just browned (approximately 1 minute)
Turn off the heat of the pan, cut the banana halves in half again across to make four pieces. Flip the banana and leave it in the pan for 30 seconds as it will still be nice and hot but firm. Take the bananas out and place them onto the bread

To make the scrambled eggs add the remaining two eggs to the square dish with the maple syrup and whisk well to combine.
Turn the fry pan back on to high heat and spray with a little more coconut oil. When pan is hot pour in the egg mixture and stir constantly until eggs are scrambled. Spoon the eggs on top of the banana and then top it with a few blueberries.
Finally to finish it all off drizzle some raspberry sauce around the plate and serve immediately.

For a lighter breakfast I like to just make the french toast with the banana, but you have to try it at least once with the egg. You will be surprised how good it is.
