Fresh Chopped Green Salad with Chickpeas

The perfect, fresh, delicious side to any lunch or dinner, this green salad is packed with goodness!



Preparation Time: 10 minutes
Makes: 4 servings

Ingredients

Salad
1 iceberg lettuce
3 green onions
1 cucumber
1 avocados
1 green capsicum
1/2 cup chickpeas

Vinaigrette
1/4 cup extra-virgin olive oil
2 tablespoons white wine vinegar
1 tablespoon wholegrain mustard
1 teaspoon caster sugar
Sal and pepper

Method
  • Prepare all of the ingredients. Chop the lettuce, thinly slice the green onions, halve lengthways and chop the cucumber, peel and chop the avocado, deseed and slice the capsicum, and drain the chickpeas.

  • Make the vinaigrette. Place the oil, vinegar, mustard and sugar in a mixing bowl or in a screw top jar. Season with salt and pepper, then mix or shake to combine. Set this aside.

  • In a bowl, combine the lettuce and capsicum.



  • Add the chickpeas, cucumber, and avocado.







  • Drizzle with vinaigrette and toss through to combine.
