Fresh Oysters Kilpatrick
Most people either love or do not want to try oysters - I try anything and although I did not used to like oysters, I now LOVE them - they are a delicacy I eat on rare occasions. So I saw them at the shop and could not resist buying them, and decided instead of having them natural I would make oysters Kilpatrick, and the result was "heavenly"! I also added a bit of cheese on the top before putting them in the oven for a short time.
Preparation Time: 10 minutes
Cooking Time: 5 minutes
Makes: 12 oysters
Ingredients
1 doz oysters in shell (I ate them all!)
3 rashers short cut bacon, chopped finely
Butter
About 1/8 of a cup Worcestershire sauce
1 tbsp chilli sauce (optional)
1 tsp BBQ sauce
Bit of smoked paprika powder
Bit of grated cheese for topping
Method
Tip the oysters up in case there is any water in them - mine had not been frozen and there was no water.
Melt some butter in a small frypan and cook the bacon until it starts to get crispy.
Mix the Worcestershire sauce, chilli and BBQ Sauce together and add the paprika.
Taste to see if this is to your liking and add if you want to alter the taste - you may need a bit more Worcestershire sauce.
I added a bit of pepper.
Cut the bottom muscle away from the shell as they will be so much easier to eat if you do this.
Put the oysters on baking paper on a dish ready for the oven.
Add some sauce to each one - do not worry if it spills out.
Put the bacon pieces evenly inside the shell.
Add a bit of cheese to the top of each, and grill for about 3 - 5 minutes or until the cheese is starting to melt.
I prefer my oysters only lightly cooked but if you like them cooked, leave them under the grill until the cheese starts to go golden.
Delicious entre/meal followed by a salad!
