Fresh Oysters Kilpatrick

Most people either love or do not want to try oysters - I try anything and although I did not used to like oysters, I now LOVE them - they are a delicacy I eat on rare occasions. So I saw them at the shop and could not resist buying them, and decided instead of having them natural I would make oysters Kilpatrick, and the result was "heavenly"! I also added a bit of cheese on the top before putting them in the oven for a short time.

Preparation Time: 10 minutes
Cooking Time: 5 minutes
Makes: 12 oysters

Ingredients
1 doz oysters in shell (I ate them all!)
3 rashers short cut bacon, chopped finely
Butter
About 1/8 of a cup Worcestershire sauce
1 tbsp chilli sauce (optional)
1 tsp BBQ sauce
Bit of smoked paprika powder
Bit of grated cheese for topping

Method
  • Tip the oysters up in case there is any water in them - mine had not been frozen and there was no water.

  • Melt some butter in a small frypan and cook the bacon until it starts to get crispy.

  • Mix the Worcestershire sauce, chilli and BBQ Sauce together and add the paprika.

  • Taste to see if this is to your liking and add if you want to alter the taste - you may need a bit more Worcestershire sauce.

  • I added a bit of pepper.

  • Cut the bottom muscle away from the shell as they will be so much easier to eat if you do this.

  • Put the oysters on baking paper on a dish ready for the oven.

  • Add some sauce to each one - do not worry if it spills out.

  • Put the bacon pieces evenly inside the shell.

  • Add a bit of cheese to the top of each, and grill for about 3 - 5 minutes or until the cheese is starting to melt.

  • I prefer my oysters only lightly cooked but if you like them cooked, leave them under the grill until the cheese starts to go golden.

  • Delicious entre/meal followed by a salad!
