Fresh Pasta With Butter Thyme Spinach Bacon

Really good fresh pasta shouldn't need many additional ingredients but this delicious recipe can turn even the plainest of pasta into a delight. Add croutons for an extra, crunchy texture.

Preparation Time: 5 minutes
Cooking Time: 20 minutes
Makes: 2 x servings

Ingredients
1 x 400g pack of stuffed fresh pasta such as tortellini (with filling of your choice)
2 x rashers of bacon
2 x large handfuls of fresh spinach, washed
1 x large knob of butter
1/4 cup of thyme leaves
Parmesan cheese to grate
Scattering of croutons (optional)

Method
  • Fry the bacon in a frying pan until crispy and set aside to cool.
  • Chop the bacon into small pieces.
  • Cook the pasta as per packet instructions then set aside.
  • Melt the butter in a large frying pan.
  • Add the thmye and gently cook for a minute or so.
  • Drain the pasta then add to the frying pan and stir until all shells are coated in thyme butter.
  • Add the spinach to the pan, stirring for a minute or two until it begins to wilt.
  • Turn the mixture out onto two plates and grate over parmesan cheese to serve.
  • Croutons make a great addition to add a crispy texture.
  • Serve with a salad
